Irish Pound Cake is perfect for a party, especially as everyone is waiting to see who is the lucky one to get the coin!
Recipe Ingredients
- 4 cups Flour
- 2 cups Sugar
- 2 cups Butter
- 2 tsp Baking Powder
- 1/2 tsp Salt
- 6 Large Eggs
- 1 tsp Flavouring Extract
- 1 Dollar / 1 Pound / 1 Euro (Wrapped in greaseproof paper)

How To Make
- In a mixing bowl, mix together the sugar and butter until they reach a creamy consistency.
- Beat the eggs and add to the mixture, stirring continuously.
- Sieve in the flour gradually. Then add the salt and baking powder, mixing thoroughly.
- Now add the flavouring extract into the mixture and stir well.
- Take your coin, wrapped in greaseproof paper, and put into the mixture. Then stir it well.
- Put the mix into a loaf pan. You can glaze with butter or sugar if you want to.
- Place in a preheated oven at a medium heat for about 40 minutes, or until it looks baked.
- Best served fresh and heated from the oven. Slice the loaf up and get stuck in with plenty of butter and your favourite jam!
