Irish Pound Cake is perfect for a party, especially as everyone is waiting to see who is the lucky one to get the coin!

Recipe Ingredients

  • 4 cups Flour
  • 2 cups Sugar
  • 2 cups Butter
  • 2 tsp Baking Powder
  • 1/2 tsp Salt
  • 6 Large Eggs
  • 1 tsp Flavouring Extract
  • 1 Dollar / 1 Pound / 1 Euro (Wrapped in greaseproof paper)

How To Make

  1. In a mixing bowl, mix together the sugar and butter until they reach a creamy consistency.
  2. Beat the eggs and add to the mixture, stirring continuously.
  3. Sieve in the flour gradually. Then add the salt and baking powder, mixing thoroughly.
  4. Now add the flavouring extract into the mixture and stir well.
  5. Take your coin, wrapped in greaseproof paper, and put into the mixture. Then stir it well.
  6. Put the mix into a loaf pan. You can glaze with butter or sugar if you want to.
  7. Place in a preheated oven at a medium heat for about 40 minutes, or until it looks baked.
  8. Best served fresh and heated from the oven. Slice the loaf up and get stuck in with plenty of butter and your favourite jam!
  9. Wait and see who the lucky one is!
